We hope you enjoy this month’s recipe featuring our aged sheep and cow blend cheese, Aux Arcs as well as our aged sheep’s milk cheese, Prairie Tomme! This quiche is our take on a classic and the cheese really takes it to the next level.

- 4 strips of bacon, cooked
- 1 onion, thinly sliced
- 1 c. shredded Aux Arcs
- 4 eggs, lightly beaten
- 1/4 c. grated Prairie Tomme or Parmigiano Reggiano
- 2 c. heavy cream
- 1/4 tsp. nutmeg
- 1/2 tsp. salt
- 1/4 tsp. freshly cracked pepper
- Tabasco or other hot sauce to taste
Preheat oven to 375 degrees.
Combine all ingredients in a mixing bowl. Pour into muffin tins or pie pans (we used 5″ pie tins).
Bake until a knife inserted comes out clean. Usually 10-15 minutes, depending on size.
Top with fresh herbs or a slice of tomato if you wish. Rest 10 minutes before serving.
