Sparkling wine aficionado and Managing Partner of Ça Va Champagne Bar in Westport, Caitlin Corcoran, shares pairings of our artisan, small batch cheeses with her favorite Champagnes and sparkling wines. What better way to celebrate an August Sunday afternoon than to leisurely sip some fantastic bubbly wines from all over the world paired with our award-winning sheep’s milk cheeses? This is our third annual collaborative event co-hosted with Caitlin. Expect to savor five scrumptious tastings of sparkling wines paired with five different Green Dirt Farm cheeses specially chosen to marry well with the particular sparkling wine or champagne. Caitlin and a host from Green Dirt Farm will discuss the flavors in the wines and how the carbonation impacts flavor tasting. You’ll also learn about how fermentation creates carbonation in the wines (and, much to our surprise, sometimes in the cheese!) Have something special to celebrate?
