A Light, Spreadable Sheep Cheese Similar to Ricotta
One of our most versatile and beloved fresh sheep milk cheeses, our Fresh Plain cheese is simply sheep milk, cultures, a tiny amount of natural rennet, and a touch of salt. It’s patterned after Brebis, a traditional French sheep milk cheese, and is similar in texture to ricotta.
Our Fresh Plain cheese is lactic style and fresh, meaning it’s an un-aged cheese. The cheese ripens and drains for 48 hours, after which it is promptly packaged. This sheep milk cheese has a soft, delicate curd. It crumbles well when cold, and becomes more spreadable as it warms up. For people familiar with Fresh Chèvre, that is a good comparison; but without the gaminess sometimes associated with goat cheese.
Our Fresh Plain sheep milk cheese is bright and lemony, with a clean milky note on the finish. This light yet dynamic flavor is influenced by the variety of grasses our sheep graze.
What Pairs Well With Fresh Plain Sheep Milk Cheese?
Fresh Plain sheep milk cheese is amazingly versatile and perfect for spreading on sandwiches or crackers, crumbling into salads or sprinkling on pizza and pasta. It also pairs well with crisp and acidic white wines, strawberries, and honey. However, all you really need to enjoy Fresh sheep milk cheese is a spoon!

How long will my sheep cheese age before I receive it?
Our Fresh cheese is lactic style and fresh, meaning it’s un-aged cheese. The cheese ripens and drains for 48 hours, after which it is promptly packaged and ready for you to eat.
How long does sheep cheese last?
We recommend enjoying Fresh sheep’s milk cheese within two weeks of receiving it. Keep it stored in the fridge to preserve freshness.
How should I prepare my sheep cheese?
If you want your Fresh cheese to be spreadable, take it out of the refrigerator about an hour before you want to eat it, letting it warm up a bit before you dive in. If you prefer it crumbly, like for an omelet or salad, use it right out of the fridge!
Can you freeze sheep cheese?
While it’s possible, we don’t recommend freezing cheese to preserve it. It can damage the texture and flavor of the cheese.
Can I ship my order as a gift?
Absolutely — artisan sheep cheeses make the best care package or gift! Let us know at checkout that your order is a gift by checking the appropriate box and filling out the recipient’s information. You can write a gift message if you’d like, which we’ll put in a card and send it with the order!
How do you ship cheese safely?
Once your order is received, we prepare for it to be shipped to you promptly! To keep your cheese cool during its journey, we place ice packs wrapped in wax paper in the shipping box. We include a layer of paper fill to cushion the cheese and absorb any condensation. Finally, your cheese is packed in its own smaller box and placed inside the insulated cooler! The shipping box is labeled clearly as perishable and it’s ready to head your way.
Do you offer returns if my order is lost or damaged?
Don’t worry about returning a damaged perishable item — we will absolutely replace your order if it arrives damaged or becomes lost!
How long will it take for my order to reach me?
It depends when you order and where you’re located! We only ship on Mondays and Tuesdays. If you order by noon on Tuesday, we’ll ship your products promptly that same week. If you order later in the week, we may wait until the following week to send your shipment. The same goes for orders with overnight shipping selected. Your cheese is perishable, and we want to ensure it gets to you safely! Email us at firstname.lastname@example.org if you have special requirements regarding when your shipment arrives.
